I made my first semi-homemade blueberry pie today...and I must say DELISH!
It is completely gluten free, and the only thing not homemade is the bottom crust. You obviously can make your own crust "simple as pie" (haha) if you do not have Celiacs. However, from scratch, gluten free pie crust is incredibly hard to make! Here is my recipe for an amazing blueberry pie in less than an hour:
INGREDIENTS FOR PIE FILLING
1 cup organic sugar
6 TBS cornstarch
Sprinkle of salt (about 1/4 tsp)
1 Tsp ground cinnamon
4 cups of blueberries
1 TBS butter
INGREDIENTS FOR CRUMBLE TOPPING
1 cup of organic sugar
1 stick of butter, cubed and chilled
2 Tsp ground cinnamon
1 cup of Arrowhead Mills Gluten Free All Purpose Baking Mix
Combine all ingredients in a mixing bowl and mix with hands until topping becomes lumpy and crumbly.
Preheat oven to 425
Mix sugar, cornstarch, salt, and cinnamon in a medium bowl
Sprinkle over blueberries and mix with spatula
Pour berry mixture into pre-made gluten free crust
Dot butter on top of pie
Cover entire pie with the crumble topping
Bake pie on lower rack for 45-50 minutes
Let pie set for about 30 minutes before chowing down:)
